The technique used to make this prosecco is the classic method, also known as the traditional method or champenoise method, which involves a second fermentation in the bottle. This process requires more time and labor than the Charmat method, typically used for standard Prosecco, but produces finer bubbles and a more complex structure. The second fermentation takes place in the bottle and the wine rests on the yeasts (sur lie) for a period that can vary from 12 to 36 months or more. This gives the wine greater aromatic complexity and a finer perlage.
The color can vary from a pale pink to a salmon pink, depending on the contact time with the skins of the Pinot Noir grape. The Classic Method gives a fine and persistent perlage. On the nose you can perceive notes of small red fruits (such as wild strawberries, raspberries and cherries), together with floral hints (rose and violet) and a light fragrance of bread crust and yeast, due to the aging on the yeasts. In the mouth, however, the wine is fresh and lively, with good acidity that balances the fruity component. The aftertaste may present light citrus notes and a pleasant minerality.

- Starters and First Courses: Excellent with fish starters, carpaccio and salmon tartare, shellfish, seafood risottos.
