A Taste of Goodness
Fennel is a plant with known digestive and carminative properties, rich in essential oils and flavonoids. It is planted in September and harvested by hand from February onwards on the I Contadini farm. The Fennel Carpaccio is cleaned, deprived of its hard ribs and sliced into a thin carpaccio. Matured in brine and then hand-packed raw, it preserves its organoleptic and nutritional characteristics. On the palate, it is crisp, fresh and fragrant.
