Cetara Armatore Anchovy Fillets are a top-quality product obtained from anchovies caught during the spring season on the Amalfi Coast. The larger ones are selected and processed by hand following an ancient tradition handed down from generation to generation. The anchovy fillets contain only two ingredients: anchovies and extra virgin olive oil, and are free of preservatives and artificial additives.
Traditional Processing
The anchovies are cleaned and processed by hand, one by one, to guarantee their quality and freshness. They mature for at least 8 months in "terzigni", chestnut barrels, which give them a unique and unmistakable flavor. At the end of the maturation process, the anchovies are desalted, boned and preserved in olive oil. The anchovy fillets are packed in a 90g tin, which preserves their flavor and nutritional properties.
